Originating in Belgium in the early 1900’s. It is a hearty, big muscles breed that produces a leaner and surprisingly more tender cut of beef. They are naturally lean, high in protein, lower in fat, calories and cholesterol than chicken breast. The breed has massive skeletal muscles, which are composed of smaller muscles fibers, resulting in more tender meat. This also allows fewer fat deposits both within and around the muscle fibers. Other lean beef does not have this finer fiber, so they generally are not as tender.
